Tomato Pulav

Tomato pulao is a flavourful dish made of Basmati rice and various Indian Spices. It's an absolute favourite of mine and can be made in a jiffy. 

Ingredients  
Tomato Pulao
  • Basmati rice - 2 cups
  • Tomato purée - 1 big tomato
  • Onion -1
  • Green chillies - 3
  • Ginger garlic paste - 1 teaspoon
  • Chilli powder - 1 teaspoon (optional)
  • Turmeric powder - 1/4th teaspoon
  • Cooking oil - 2 teaspoon
  • Salt - as required
Spices
  • Cardamom - 1 stick
  • Cloves - 3
  • Anise - 1
  • Fennel seeds - 1 pinch
  • Bay leaf - 1
Preparation
  1. Soak rice for. 30 mins in water. It makes rice soft, however it is only optional.
  2. Take a heavy bottomed vessel or a pressure cooker, pour oil and when hot add all spices and fry for 30 seconds. Add onions and fry until light brown. Now add ginger garlic paste, green chillies and fry until raw smell leaves.
  3. Add the tomato purée at this stage and cook until the raw smell wears off. Then add turmeric and chilli powder and fry for 30 seconds. Throw in the coriander leaves.
  4. Add the soaked rice required salt. Pour 3 cups water and let it boil. When it starts boiling reduce the flame to low and cook until it is done. Time may vary for a pressure cooker.
