Veg Noodles Indo Chinese

Veg Noodles / Hakka noodles is an Indo - Chinese dish which is made at road side Dhabas in India. It is one of the popular street side food and yet another favourite of mine along with Gobi Manchurian.! Yummmm..!!! Mouth watering :) Plenty of vegetables are used to make this dish. My husband cooked this Veg Chowmein for dinner (with my help and directions of course :p) and I must admit, he did a wonderful job :)

Ingredients
  • Hakka Noodles - 2 cakes 
  • Cooking oil - 3 to 4 teaspoons
  • Onion - 1 large or medium
  • Garlic pods - 6 to 7 finely chopped
  • Green chillies - 3 finely chopped
  • Pepper powder - 1 tbsp (optional) 
  • Vegetables - Carrot, Capsicum, Beans, Potato, Cabbage - 1 cup
  • Spring onions - 5 - 6 stems chopped for garnishing
  • Salt - as required
Sauces
  • Green chilli sauce / 1 tsp
  • Red chilli or Hot sauce - 1 tsp
  • Soy sauce - 1 tsp
  • Vinegar - 1 tsp
Preparation
Chop carrot, beans, cabbage finely. Cut capsicum lengthwise and potato into medium edible pieces. Cook Hakka noodles by boiling enough water to immerse the noodles, switch off the stove and then add the noodles to it with 1 tsp of oil and little salt. Keep it for 2 minutes and drain the water. Spread it on a plate. 
Take a deep frying pan, pour a tsp of oil for each set of vegetables and fry them separately on medium high flame. Add salt and pepper for each set. Fry them crunchy. After frying each vegetable, transfer it to a plate, then go for the next set of vegetable. Do not fry them together, it will not come out well. I've tried it. 
Now in the same frying pan add just half tsp of oil and fry garlic, green chillies and onion. When it is half done add spring onions and mix well. 

Now mix all the vegetables and start adding the sauces one by one. First Red chilli sauce, fry. Green chilli sauce, fry. 

 
Now add the cooked noodles and pour in the soy sauce and vinegar. Mix well. Be careful not to mash it. Lower the flame completely at this point or even switch off if required. 
Serve with sauce of your choice.!
