Ragi Mudde/ Sangati/ Kali

Ragi Mudde/ Sangati/ Kali a popular dish in the rural areas of Karnataka, Andhra and Tamil Nadu. It is one of the healthiest food, the health benefits are enormous! My cousin makes it for us every time we visit her place. My brother and I get excited to have some rural food when we visit the village. Brings back some good memories. Mom learnt it and I learnt to make it from her :) Cooking time is just 10 minutes.
Ingredients
  • Ragi flour - 1 cup
  • Water - 2 cups
  • Salt - as required (optional)
Preparation
  • Take an aluminum vessel, pour 2 cups of water, add salt (optional)and keep it on medium flame. When the water begins to boil add the ragi flour and do not mix. 
  • Wait until the water rises up, simmer the flame to low and start mixing quickly with a wooden spatula. Make sure there are no lumps. Keep stirring for 5 minutes. Now take out the spatula and close it wit a lid and cook for 2-3 minutes.
  • Take cold water in a vessel, wet your hand and remove the Ragi from the spatula. Use the same spatula to take the ragi from the vessel, use your hand too. Now wet your hand again and try to roll it into a ball slowly.
  • Serve it hot with greens curry, sambar or kurma. Groundnut chutney also serves as a good combination
