I picked up this chutney on Padhu's Kitchen. If you are bored of the regular chutney varieties you could this one for a change. I tweaked the quantities just a little to suit my taste.
Ingredients
- Red Capsicum - 1 chopped
- Onion - 1/2 roughly chopped
- Tomatoes - 1 and half roughly chopped
- Ginger - 2" piece
- Garlic - 3-4 pods
- Green chilli - 2-3
- Coriander - 4 stems
Table 2
- Oil 1 tsp
- Urad dal - 1 tsp
- Red chillies - 2
- Kadala paruppu - 1 tsp
- Pottukadalai / Chana dal - 1 tsp
- Jeera/ Cumin - 1 tsp
To temper
- Oil - 1 tsp
- Mustard - 1 tsp
- Urad dal 1 tsp
- Curry leaves - 1 sprig
Preparation
- Take a small frying pan, pour a tsp of oil and when hot add all the items under table 2 one by one and fry until light brown. Set it aside.
- In the same frying pan, pour 2 teaspoons of oil and when hot add green chilli, ginger, garlic and onions and fry until light brown. Then add the tomatoes and fry for 2 minutes. Now add the Red capsicum and fry until it is soft. Switch it off and add the chopped coriander leaves. Allow it to cool.
- Grind the fried "table 2" items that you set aside into a smooth paste. Now add the capsicum mixture and salt, grind it smooth.
- Pour oil in the same pan and when hot temper it with mustard, urad dal and curry leaves. Add the tempering to the chutney.
