It has been a rainy day. The sound of rain lashing over my balcony door, the chill breeze gushing through my face, and the sight of lush green grass and wet rooftops makes me nostalgic. My mind wanders back to India and I wish I could have some hot tea and street side Chaat right now! A delightful north Indian snack from amchi Mumbai.! I decided to make Pav Bhaji as I don't see all items required to make Chaat. Pav Bhaji is a light evening meal that is spicy and satiates the want to have something before dinner. Below is the recipe for Pav bhaji masala I got from my North Indian friend.
Ingredients

Onion - 1 large
Powders
Note: It is not necessary to have all the vegetables given above. However, the basic required would be Cauliflower, Carrot, Potato, Onion. The dry peas must be soaked at least for 2hrs.
Pav Bhaji Masala |
- Cauliflower - 2 cups
- Cabbage - 2 cups
- Brinjal - 1 cup
- Beans - half cup
- Potatoes - 2 peeled
- Tomatoes - one cup
- Dry peas - 50 gms (soaked for 2hrs)
- Salt - as per taste
Seasoning
Onion - 1 large
Powders
- Chilli powder - 2 teaspoons
- Turmeric powder - 1/4th teaspoon
- Garam Masala powder - Half teaspoon
- Pav bhaji masala - 2 teaspoons
- Chop all vegetables finely and pressure cook it along with dry peas, tomatoes, chilli powder, turmeric powder, garam masala and salt. Once done, allow the pressure to cool, drain water and set it aside.Now mash all the vegetables when it is hot.
- In a frying pan, pour oil and when hot sauté the onions until it is transparent. Then add the mashed vegetables and pour the vegetable water that you set aside earlier to mashing.
- Now add the Pav bhaji masala and adjust salt if required. Pav Bhaji masala is ready. Right before serving add some onions with a hint of lemon juice. It will taste even better. You can also eat it with chapati or roti if there is no Pav.
