Vegetable pasta prepared here is in the Indian style. It is spicy also known as Masala pasta. Yet another quickie for dinner or an evening snack. Add a few vegetables and it is a healthy relish.

- Pasta - 200 gms
- Onion - 1
- Tomato - 1
- Curry leaves - 1 sprig
- Green chillies - 2-3
- Mustard - 1 teaspoon
- Vegetables - 1 cup ( beans, carrot, capsicum, green peas, potato)
- Cooking oil - 2 teaspoon
- Pav bhaji masala powder or Garam masala - 1 teaspoon
- Red chilli powder - as per taste
- Salt -as required
- Boil water in a vessel, when hot add pasta along with a teaspoon of oil and a little salt cook for 7-8 minutes until it is tender. The oil will make sure the pasta doesn't get sticky. Drain the water and set the pasta aside.
- Pour oil in a frying pan and temper with mustard, green chillies and curry leaves. Add the chopped onions and fry until it turns light brown.
- Now add the chopped tomatoes and cook until it is mushy. Throw in the red chilli powder, turmeric powder and Pav bhaji masala powder and cook for a minute.
- Then add the chopped vegetables into the gravy and cook until it is 80% done. (leave it slightly crunchy)
- Mix the cooked pasta and check for salt. Cook for 4-5 minutes.
- Garnish with coriander and serve.
