Capsicum Rice

Capsicum rice is a spicy rice dish which can be made in a jiffy. It requires very few basic ingredients for preparation and can be had with raita.

Ingredients
Capsicum rice
  • Capsicum - 1 and a half
  • Cooked rice - 2 small cups
  • Onion - 1 medium sliced
  • Curry leaves - 1 sprig
  • Ginger garlic paste - 1 teaspoon
  • Garlic - 3 cloves
  • Green chillies - 2 (optional)
  • Cinnamon - 2 inch piece
  • fennel seeds - 1 pinch
  • Cumin seeds - 1 teaspoon
  • Cashew - 5-6 (optional)
  • Cooking oil - 2 teaspoon
  • Salt - as required
Spice Powders
  • Turmeric - 1/4th teaspoon (optional)
  • Pepper powder - 1/2 teaspoon
  • Garam Masala - 1 teaspoon
Preparation 
  1. Pour oil in a frying pan, when hot add cumin seeds, fennel seeds, cinnamon, curry leaves, green chillies and fry for 30 seconds. Then add cashew and fry. Now add the sliced onions and fry until it is light brown.
  2. Add the ginger garlic paste and fry until the raw smell leaves. Then add the chopped garlic and Capsicum, close the lid and cook until it is half done on medium flame.
  3. Then add all the powders, salt and mix it well. Sprinkle water every now and then. Cook again until the capsicum is a little crunchy. Make sure it doesn't get burnt. Switch off the stove and wait until it cools. Just warm enough to mix rice.
  4. Now add the cooked rice and mix it well. Do not mash the rice while mixing; the rice has to be a little dry such that it does not get mashed. 
Note :- The picture above is without turmeric and the one shown below is when turmeric is added. 
Capsicum rice is ready to serve!
