Gobi Manchurian

Gobi Manchurian is an Indo Chinese food prepared using Cauliflower florets . It is usually had with fried rice. The combination is simply delicious.! It does not require a combination. Gobi Manchurian is delicious by itself. There is a dry version and a gravy version. Let's see how we can recreate this restaurant magic at our home.

Main Ingredients 
  • Cauliflower - 300 gms
  • Chilli powder & salt - as per your taste
  • Sunflower oil for deep frying
  • Ginger garlic paste - 2 teaspoon
  • Spring onions for garnishing
For batter
  • Maida / all purpose flour - 1/2 cup
  • Rice flour - 1/3 cup
  • Corn flour - 1/4 cup
  • Chilli powder - 1 1/2 teaspoon
  • Salt - as required
For sauce
  • Garlic - 1 full / 12 to 15 pods finely chopped
  • Ginger - 2 inch piece finely chopped
  • Green chillies - 3 finely chopped
  • Spring onions - 3 teaspoons
  • Onion - 1 medium 
  • Chilli powder - 1 teaspoon
  • Soy & tomato sauce - 3 teaspoons each 
  • Oil - 1 teaspoon
Preparation
Clean, wash and cut the cauliflower into single florets, big enough to bite. Boil water with salt. When it starts boiling, add the cauliflower and let it boil for 5 minutes. Now drain the water and keep the florets aside. Marinate the florets in ginger garlic paste, chilli powder and salt for 15 minutes.

Batter preparation
Meanwhile mix all the ingredients under "For batter" and add water little by little. Make a thin batter but thick enough for the florets to be dipped and coated. Be careful with the salt and chilli powder quantity since you had already added some earlier. Suit yourself.

Frying Gobi
Take the florets, dip it in the batter completely and fry it in the oil one by one. Take it out once it is fried well. (the batter will solidify and turn orangish once it is done). You could spread it on paper which will take away some oil off the florets.

Sauce preparation
Drain oil and heat the same frying pan on medium high. Add the finely chopped items one by one. Add onions and salt and fry some more. Now add chilli powder, fry, add the soy sauce, tomato sauce, mix well. Then add the fried florets into this sauce and let it be for 2-3 minutes and switch off. Garnish with spring onions.

A delicious Gobi Manchurian is ready.! Serve it with Fried rice or have it as it is.
Tips
  1. Use a small Kadai / deep frying pan this will help reduce usage of oil.
  2. For a gravy version, mix a teaspoon of corn flour in a cup of water and pour it on the above dish, cook until desired consistency. Source  Padhu's Kitchen
