Tomato rice

Tomato rice is a common dish prepared in India. You will find it in Mexican cuisine as well. The recipe below is South Indian style of Tomato rice. It is simple to make and I totally loved it. You can make it for quick lunch box with boiled egg or any side dish like chips or murukku.  I tried this from Jaya's Recipes which is yet another amazing food blog. I tweaked the quantities and ingredients a little to suit my taste.

Ingredients
Tomato Rice
  • Rice - 2 small cups
  • Onion - 1 large sliced
  • Tomatoes - 2 large sliced thinly
  • Green chilli and ginger paste - 2 teaspoons
  • Chilli powder - 1 teaspoon
  • Turmeric powder - 1/4th teaspoon
  • Mustard seeds - 1 teaspoon
  • Channa dal / pottukadalai - 1 teaspoon
  • Urad dal - 1/2 teaspoon
  • Curry leaves - 1 sprig
  • Coriander leaves - 4 stems finely chopped
  • Sesame Oil or any cooking oil - 2 to 3 teaspoons
  • Salt - as required
Preparation
Gravy
  1. Cook rice, spread it on a plate and allow it to cool.Sprinkle some oil so that it will not stick to one another.
  2. In a deep frying pan pour Sesame oil or any cooking oil, when hot add mustard seeds. Once it crackles add channa dal and urad dal. Fry a little. Add curry leaves and sliced onion, fry until it turns light brown. Now add the sliced tomatoes and the green chilli ginger paste. 
  3. Add chilli powder and turmeric powder immediately and cook until the tomatoes turn mushy. Add salt and mix well.  Switch off and let it cool.
  4. Then add the cooked rice to the tomato gravy and mix it slowly. Take care to not mash the rice. Garnish with coriander leaves. Serve with boiled egg, chips, murukku or even Raita.
