Potato Poriyal / Fry

Potato Poriyal doesn't need introduction. It is a simple recipe can be had as side dish with any rice and curry. Works out great for curd rice.
Ingredients
  • Potato - 4-5 peeled and chopped
  • Cooking oil - 1-2 tbsp
  • Mustard seeds - 1 tsp
  • Jeera/ Cumin - 1 tsp
  • Urad dal - 1/2 tsp
  • Curry leaves - 1 sprig
  • Red chilli powder - 1 tbsp
  • Turmeric powder - 1/4th tsp
  • Salt - as required
Preparation
  • Wash, peel and chop the potatoes into edible pieces and keep it ready. Pour oil in a frying pan, when hot add mustard, cumin, curry leaves and fry for 30 seconds.
  • Now add the chopped potato and start cooking it on low medium flame. Keep stirring the potatoes every now and then. Close the lid and cook. Sprinkle water so as to not let it burn.
  • After 10 mins of cooking It will turn a little soft, then add turmeric powder, salt and red chilli powder. Cook for another 10 mins. Sprinkle water now and then and stir it.
  • When it turns soft and edible, switch off and serve.
Note: You could also pressure cook the potatoes and follow the above steps for quick dish. But the potatoes will turn out a little mushy.
