Pudalangai Kootu/ Snakegourd side dish

Kootu can be prepared using vegetables like Pudalangai (snake guard), Cabbage, chow chow etc. It is simple and quick too. Can be served with just plain rice or can be taken as side dish.

Ingredients
  • Pudalangai - 1 full 
  • Paasi parupu(Moong dal)- 1/4th cup
  • Turmeric powder - 1/4 teaspoon
  • Salt - as required 
To grind
  • Grated coconut- 1/4th cup
  • Green chillies - 4
  • Cumin/ Jeera - 1 teaspoon
To temper
  • Oil - 2 teaspoon
  • Mustard - 1 teaspoon
  • Curry leaves - 1 sprig
  • Red chilli - 1
  • Urad dal - 1/2 teaspoon
Preparation
Pudalanga Kootu
  •  Take the Snake gourd and chop of little bit both the ends. Wash it, remove the seeds and cut it into small pieces. 
  • In a pressure cooker take the Paasi parupu, chopped Pudalanga, add turmeric and a teaspoon of oil and pour enough water for cook, a little more than a glass approximately. Let it cook for 10 minutes and wait until the pressure leaves. 
  • Meanwhile, grind the coconut, green chillies and cumin seeds together into paste.
  • Now take a frying pan, temper it with items under "to temper" and pour the cooked pudalangai into the pan. 
  • Then add the ground coconut paste and cook it for 5 minutes.
Pudalangai kootu is ready!
