Rava dosa

Rava dosa is an instant dosa which comes handy when you run out of dosa batter. Easy and quick. Goes with any chutney of your choice.
Ingredients
  • Rava/ Semolina - 1 small cup
  • Maida/ all purpose flour - 1/2 cup
  • Rice Flour - 1/2 cup 
  • Butter milk - 1 and half glass (optional)
  • Cumin seeds - 1/2 teaspoon
  • Coriander leaves - 4 stems
  • Chillies - 2
  • Salt - 1/2 teaspoon or as per taste
  • Oil - 4 - 5 teaspoons (to make dosa)
Preparation
  1. Take all the flours into a container mix it well and pour the buttermilk or water (whichever you have decided to use) to make a thin batter. The batter must have the consistency of buttermilk. Watery.
  2. Now add cumin seeds, finely chopped chillies and coriander leaves, salt into the batter, mix well and let it soak for half an hour.


Take a Dosa pan, heat it until it is good enough to pour the batter. Sprinkle oil, take a ladle full of the thin batter and pour it on the pan. Do not try to spread a lot. Since the batter is thin, it may tear in the process. 
After a minute when the dosa leaves the pan a little, turn it to the other side, you will notice crispy holes in the dosa. Let it cook for a minute.  Pour oil on the outer only if necessary. It is purely optional. 
You can touch the surface of the dosa to check if it is done. If it is not sticky, dosa is ready. Serve with chutney of your choice.

Vegetable Pasta

Vegetable pasta prepared here is in the Indian style. It is spicy also known as Masala pasta. Yet another quickie for dinner or an evening snack. Add a few vegetables and it is a healthy relish.

Ingredients
  • Pasta - 200 gms
  • Onion - 1
  • Tomato - 1
  • Curry leaves - 1 sprig
  • Green chillies - 2-3
  • Mustard - 1 teaspoon
  • Vegetables - 1 cup ( beans, carrot, capsicum, green peas, potato)
  • Cooking oil - 2 teaspoon
Spice powders
  • Pav bhaji masala powder or Garam masala - 1 teaspoon
  • Red chilli powder  - as per taste
  • Salt -as required
Preparation
  • Boil water in a vessel, when hot add pasta along with a teaspoon of oil and a little salt cook for 7-8 minutes until it is tender. The oil will make sure the pasta doesn't get sticky. Drain the water and set the pasta aside.
  • Pour oil in a frying pan and temper with mustard, green chillies and curry leaves. Add the chopped onions and fry until it turns light brown. 
  • Now add the chopped tomatoes and cook until it is mushy. Throw in the red chilli powder, turmeric powder and Pav bhaji masala powder and cook for a minute. 
  • Then add the chopped vegetables into the gravy and cook until it is 80% done. (leave it slightly crunchy)
  • Mix the cooked pasta and check for salt. Cook for 4-5 minutes. 
  • Garnish with coriander and serve.

Note : It is not necessary to have all vegetables. You can make it with just beans, carrot and potato
