Adai Dosa / Lentils Crépe

Adai Dosa / Lentils Crepe is a healthy breakfast, rich in protein. It can be made with ease. All it needs is 4 hrs soaking of various lentils. There is no fermentation process and hence can be made quicker than the plain dosa. You can have it with coconut chutney or Sambar.
Adai Dosai

Ingredients
  • Toor Dal - 1 small cup
  • Moong dal / Paasi paruppu - 1 small cup
  • Green gram - 1/2 cup
  • Boiled rice / Puzhungal arisi or Idli rice - 1 cup
  • Raw rice - 1 cup 
  • Dry red chillies - 5
  • Garlic - 7 pods
  • Pepper or pepper powder - 2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Curry leaves - 1 sprig
  • Salt - as required
Preparation
Soak all the cereals and rice for 4 hours. Then wash it and take it in a mixer, add all other ingredients and grind it into a fine paste. The batter will be a little thick. Transfer it to a container, add water to turn it into dosa batter consistency. Add salt.
Now heat the dosa pan, sprinkle some oil, pour a ladle of adai batter and spread it well.
Add some oil on the outer of the dosa (optional). Allow it to cook for 2 - 3 minutes. Now turn the dosa over and let it cook for 2 minutes. Adai dosa will take longer to cook compared to regular dosa. 
Once you feel it is well cooked, take it out and serve it with chutney of your choice. You can even have it without chutney as it is flavoured and spiced up while making batter itself.

Rava dosa

Rava dosa is an instant dosa which comes handy when you run out of dosa batter. Easy and quick. Goes with any chutney of your choice.
Ingredients
  • Rava/ Semolina - 1 small cup
  • Maida/ all purpose flour - 1/2 cup
  • Rice Flour - 1/2 cup 
  • Butter milk - 1 and half glass (optional)
  • Cumin seeds - 1/2 teaspoon
  • Coriander leaves - 4 stems
  • Chillies - 2
  • Salt - 1/2 teaspoon or as per taste
  • Oil - 4 - 5 teaspoons (to make dosa)
Preparation
  1. Take all the flours into a container mix it well and pour the buttermilk or water (whichever you have decided to use) to make a thin batter. The batter must have the consistency of buttermilk. Watery.
  2. Now add cumin seeds, finely chopped chillies and coriander leaves, salt into the batter, mix well and let it soak for half an hour.


Take a Dosa pan, heat it until it is good enough to pour the batter. Sprinkle oil, take a ladle full of the thin batter and pour it on the pan. Do not try to spread a lot. Since the batter is thin, it may tear in the process. 
After a minute when the dosa leaves the pan a little, turn it to the other side, you will notice crispy holes in the dosa. Let it cook for a minute.  Pour oil on the outer only if necessary. It is purely optional. 
You can touch the surface of the dosa to check if it is done. If it is not sticky, dosa is ready. Serve with chutney of your choice.

Instant Ragi Dosa

Ragi is one of the most nutritious food that we will come across. It helps reduce glucose levels in our body, and also to overcome anemia. One of the best food you may want to add to your daily diet if you are considering weight loss. Below is the recipe for instant ragi dosa.

Ragi Dosa Batter
Ingredients
  • Ragi flour - one small cup
  • Wheat flour - 2 small cups
  • Onion - finely chopped 3- 4 teaspoon
  • Green chillies - 3
  • Cumin/ Jeera - 1 teaspoon
  • Salt - as required 
Note: Whichever measuring cup you use, 1:2 is the ratio. (Ragi flour 1 : Wheat flour 2)
Preparation

Take all the above ingredients in a bowl and make a thin batter. It must be in dosa consistency. Heat the dosa pan, sprinkle oil and pour a ladle of batter on the pan and spread it round. Turn it over to cook the other side after 30 - 40 seconds. Oil the outer if required. Ragi takes time to cook so keep a check. Over cooking will make it hard hence keep turning it every 30 seconds. Serve it with chutney of your choice.
